Thoran is the simplest recipe which has cooked vegetables and seasoned with grated coconut and chilies. It is the best side dish for south Indian meal. It is prepared on almost all the days in South India.

To Grind without water
Small onions (shallots) 4 nos.
Green chillies 2-3 nos
Ginger 1/2 tsp
Jeera 1/2 tsp
Curry leaves a few
Grated coconut a little less than a cup (1 cup = 100 ml)
Coconut oil 1 tbsp
Mustard seeds 1 tsp
Red chilies 2 nos.
Chopped Carrots 1 cup
Chopped beans 1 cup
Turmeric powder 1/2 tsp (optional)
- Heat 1 tbsp oil in a nonstick pan, add mustard seeds and red chili.
- Now, add the ground mixture, saute it for 2 minutes.
- Then add the chopped carrots and beans. Add salt and mix well
- Add little turmeric(optional). Close the lid and let it cook for 10 mins.
This way thoran can be made with other vegetables too, like beetroot,cabbage, kappa (tapioca).
