Red Rice with Ladies Finger Tamarind Curry

This is yet another simple recipe is unlike the rest of the posts in this blog. This recipe is unique of its kind from the God’s own country, Kerala.

Key Ingredients

Finely chopped ladies finger 250 gm
Small onions (sambar onions) 5 nos
Mustard seeds 1 tsp
Red chili 3 Nos.
Fresh Curry leaves few
Coconut half grated
Tamarind 1 gooseberry sized (soaked in water and strained)
Onion 1 big finely chopped
Fenugreek 1 tsp
Coriander powder  2 tbsp
Chilli powder 1 tbsp
Turmeric powder 1 tsp
Slit Green chili 2 Nos.
Oil 2-3 tbsp
1. In a pan, heat 2 tbsp of oil and add mustard seeds,red chili,curry leaves, small onions and lady’s finger. Fry it well. Add a little salt, mix well and keep it aside.
2. Add oil to the same pan, roast the fenu greek and add the chopped big onions.
3. When the onion caramelizes, add coriander powder, chili powder, turmeric powder. Do not keep in stove for long as these dry ingredients may burn. Let this come to room temperature and then, add grated coconut and grind it to a smooth paste.
4. In a thick bottomed vessel, heat the tamarind water. Let it boil, then add the ground paste and salt. Let it cook for some time (roughly about 5 mins). Then finally add the fried lady’s finger.
Serve it hot with steamed red rice.

Red Rice

Red Matta Rice – 1 cup
Water 3 cups
Wash the red rice and add 3 cups of water. Pressure cook for 4-5 whistles.
