Idli Chilli Powder Recipe or Milagai Podi

This is yet another life savior recipe for any given day! You simply cannot resist to taste this idli milagai podi as it has very rich flavor of sesame seeds and sesame oil. We get many versions of idli chili powder all over India. But this Iyengar style recipe is simple and has perfect blend of ingredients. Key Ingredients
Urad dal 1 cup (1 cup = 200 ml)
Bengal gram 1/4 cup
Red Chilies 100 gm
Hing 1 tbsp
Sesame seeds 100 gm (perferably black)
Dried curry leaves (Optional) a few
Til oil 1 tsp

1. Heat a skillet well and add the sesame seeds. Let it crackle, keep it aside.
2. In the same skillet, heat oil, add all the ingredients and salt. (medium flame)
3. Roast it till the dal turns golden brown. This may take upto 5-7 mins
4. Adding salt to these ingredients while roasting is very important and the red chili may burn.
5. Once dal turns golden brown, switch off the flame and let this mixture come to room temperature.
6. Then, transfer it to a blender jar and grind it to coarse/ smooth powder. We prefer having it coarse as it tastes better.

*This can be stored in a dry, air tight container for 2 months.
*Make sure the blender is completely dry. Moisture will spoil the taste.

Serve with hot idlies/ dosas/ Adais with a dash of til/ gingely oil.
