Veg Curry for Roti/ Chapati is one of the easiest and tastiest subzis that you can make. It saves a lot of time. Especially you need not spend much time in chopping vegetables or getting the gravy ready. It is best to serve anytime of the day. The dish is very colourful, thanks to lot of veggies. Adding beetroot gives purple colour to the dish. It also adds a sweet taste to other vegetables. This dish is best suitable for beginners or bachelors or anyone who do not have much time or get too clumsy in kitchen!

Key Ingredients

Vegetables chopped as small chunks:

Carrot 2 nos.
Beetroot 1 no.
Beans 4 nos.
Potato 2 nos.
Onion 1 no. (finely chopped)
Tomato 1 no. (finely chopped)

Other Ingredients

Curry leaves a few
Ginger 1 inch piece (finely chopped)
Green chili 4 nos (slit)
Turmeric powder 1 tsp
Coconut oil 1 tsp
Coriander leaves for garnishing


  1. In cooker put all the ingredients except coconut oil and coriander leaves. Cook for 3 whistles.
  2. When the veggies are cooked, open the lid and turn on the stove
  3. Add turmeric powder and coconut oil
  4. Let it simmer until you get your preferred consistency. Add coriander leaves to garnish
